Seafood enchilada? Never heard of 'em. Anyone have a recipe?

Well, you can pretty much wrap anything in a tortilla and call it an enchilada. Many restaurants have seafood enchiladas and fish tacos. Much of Mexico is coastline after all. The main thing is to tone down the seasonings so they don't overwhelm the more delicate taste of the seafood. For enchiladas use something that will be mild in flavor and maintain it's structure -shrimp, crab or scallops, rather than fall apart as most white fishes do. Use a milder cream based sauce rather than the usual red, and a less strongly flavored cheese, such as Jack or jack mixed with a little cheddar. They should turn out great.
