Phytic acid and other Antinutrients?
I'm trying to get more cereal grains in my diet,some I have found and I like at regular grocery store's are Millet & Quinoa(there's no Natural foods store in my town). My real Q is I've done some reading about the substances in many grains such as Phytic acid and other Anti nutrients that block the absorption of some of the vitamins and minerals.Also have read about soaking,fermenting,& sprouting to help break down and/or neutralize these substances.Now about Fermenting specifically,I think I understand what it is and what is does,I just have not been finding much info on how to do it,I wonder about things like what types of bacteria's to use and just generally how to go about starting.I know it will take some practice and I'll be carefull not to make myself Sick.I guess the only people that could answer this are one's with background knowledge and/or experience or maybe someone knows of websites that deal with this subject.
